Hasselback Sweet Potatoes

Hasselback Sweet Potatoes were a smash hit! My brother loved them so much, he even posted them on Instagram. Soo Delicious!

Ingredients:

4 medium sweet potatoes
4 tablespoons unsalted butter, melted
Salt and pepper, to taste
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 cup chopped pecans (optional)
Fresh herbs for garnish (such as thyme or rosemary)

Instructions:

Preheat oven to 425°F (220°C). Line a baking sheet with aluminum foil or parchment paper.
Wash and dry the sweet potatoes. Make thin slices across the tops of the potatoes, about 1/8 to 1/4 inch apart, being careful not to cut all the way through.
Place the potatoes on the prepared baking sheet. Brush them with half of the melted butter, making sure some gets between the slices. Season with salt and pepper.
Bake for about 40-50 minutes, or until the potatoes are tender and the edges are crispy.
In a small bowl, mix the remaining melted butter with brown sugar and cinnamon.
Remove the potatoes from the oven. Brush them with the cinnamon-butter mixture, again ensuring it gets between the slices.
Return the potatoes to the oven and bake for an additional 10 minutes.
Sprinkle with chopped pecans if using, and garnish with fresh herbs.
Serve hot as a delicious side dish.
