Just made this carrot cake recipe and it's incredibly yummy!  

Ingredients:

2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 eggs
2 cups sugar
3/4 cup vegetable oil
3/4 cup buttermilk
2 teaspoons vanilla extract
2 cups grated carrot
1 can (8 ounces) crushed pineapple, drained
1 cup shredded coconut
1 cup chopped nuts (walnuts or pecans)

For the Frosting:

1/2 cup butter, softened
8 ounces cream cheese, softened
1 teaspoon vanilla extract
1 pound powdered sugar
Instructions:

Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a medium bowl, sift together flour, baking soda, salt, and cinnamon. Set aside.
In a large bowl, beat eggs and sugar together until light and fluffy. Mix in oil, buttermilk, and vanilla.
Stir in flour mixture until well blended. Fold in carrot, pineapple, coconut, and nuts.
Pour batter into prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in pans for 10 minutes, then turn out onto wire racks to cool completely.

For the Frosting:

In a medium bowl, cream together butter and cream cheese until smooth. Stir in vanilla.
Gradually beat in powdered sugar until frosting reaches desired consistency.
Frost cooled cake layers. Store in the refrigerator.
