Recipe for Ati Ampela Rica Basil

Material :
  • 500 grams of chicken gizzard
  • 1 bunch of basil, pick the leaves
  • 2 lime leaves
  • 2 bay leaves
  • 1 stalk lemongrass geprek
  • 1 segment of geprek galangal
  • salt, sugar, powdered broth to taste
  • 250 milli water
  • a little cooking oil for frying
 Softened seasoning :
  • 10 pieces of curly red chili
  • 8 pieces of cayenne pepper
  • 6 cloves of red onion
  • 3 cloves of garlic
  • 3 hazelnuts
  • 1 piece of ginger
  • 1 segment of turmeric
 How to make :
  • Wash the liver of the gizzard, cut it according to taste
  • Boil the chicken gizzard for about 20 minutes, when boiling add 2 lime leaves, remove the gizzard liver from the boiling water & discard the boiled water
  • Saute the mashed spices, lime leaves, bay leaves, lemongrass and geprek galangal until fragrant
  • Then enter the liver of the gizzard, mix well and add water, cook until the water is cooked
  • After the water is cooked, add salt, sugar and powdered broth to taste, cook until the spices are absorbed and taste test
  • After the spices have absorbed and the water has shrunk a little, add the basil leaves, stir for a while.  Lift and serve.
