Recipe for Ati Ampela Rica Basil

Material :
- 500 grams of chicken gizzard
- 1 bunch of basil, pick the leaves
- 2 lime leaves
- 2 bay leaves
- 1 stalk lemongrass geprek
- 1 segment of geprek galangal
- salt, sugar, powdered broth to taste
- 250 milli water
- a little cooking oil for frying
Softened seasoning :
- 10 pieces of curly red chili
- 8 pieces of cayenne pepper
- 6 cloves of red onion
- 3 cloves of garlic
- 3 hazelnuts
- 1 piece of ginger
- 1 segment of turmeric
How to make :
- Wash the liver of the gizzard, cut it according to taste
- Boil the chicken gizzard for about 20 minutes, when boiling add 2 lime leaves, remove the gizzard liver from the boiling water & discard the boiled water
- Saute the mashed spices, lime leaves, bay leaves, lemongrass and geprek galangal until fragrant
- Then enter the liver of the gizzard, mix well and add water, cook until the water is cooked
- After the water is cooked, add salt, sugar and powdered broth to taste, cook until the spices are absorbed and taste test
- After the spices have absorbed and the water has shrunk a little, add the basil leaves, stir for a while. Lift and serve.
