Can't wait to try this easy pancake recipe on Christmas morning! My sisters absolutely adore it. Sounds like a perfect, festive breakfast treat for the family!

Ingredients:

1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract (optional)

Instructions:

In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, mix together the beaten egg, milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter may be a little lumpy; do not overmix.
Heat a lightly oiled griddle or frying pan over medium-high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Cook until bubbles form on the surface of the pancake and the edges are slightly dry, about 2-3 minutes. Flip and cook until browned on the other side.
Serve hot with your choice of toppings, like syrup, butter, fruit, or whipped cream.
