Fried Potatoes Onions and Smoked Polish Sausage
I made Fried Potatoes, Onions, and Smoked Polish Sausage last night. The smoky flavor with the crispy potatoes was a hit. Even the kids asked for seconds!

Ingredients:

4 large potatoes, peeled and sliced
1 large onion, sliced
1 lb smoked Polish sausage, sliced
3 tbsp vegetable oil
Salt and pepper, to taste
1 tsp paprika (optional)

Instructions:

Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
Add the sliced potatoes and cook until they start to get tender, about 10-15 minutes, stirring occasionally.
Add the sliced onions to the skillet, and continue to cook until the onions become translucent and the potatoes are golden brown.
In a separate skillet, heat the remaining 1 tablespoon of oil over medium heat.
Add the sliced Polish sausage to the skillet and fry until it is browned and cooked through.
Combine the sausage with the potatoes and onions.
Season with salt, pepper, and paprika if desired. Stir well.
Cook everything together for an additional 5 minutes to blend the flavors.
Serve hot.
