Cashew, Sesame & Chilli Soba Noodles with a Fried egg Recipe

Spice up your favorite noodle dish with a kick of chili oil, some soy & sesame wok-fried veggies, and soba noodles for a seriously delish dish

Ingredients (serves 2)
2 portions of soba noodles
Veggies of choice, I went for;
100g mangetout
150g chestnut mushrooms, sliced
2 handfuls of cavolo nero
2tbsp sesame oil
2tbsp soy sauce
2tsp chili oil (or to taste)
1tsp ground ginger
1 garlic clove, minced
½ lime juice
1 large handful of cashews
Number of eggs preferred
Sesame seeds to garnish

1. Firstly, cook your noodles as instructed.

2. Bring a dry wok to medium heat and add the cashews. Toast until golden, then set aside.

3. Add the sesame oil to the pan and add the mangetout, mushrooms, and cavolo nero. Stir fry for a couple of minutes then add the soy sauce, minced garlic, ginger, and lime juice and continue to fry for a further 2-3 minutes.

4. Once the noodles are cooked, set them aside in a bowl of water to prevent sticking.

5. Next, bring a large frying pan to medium heat and add a drizzle of olive oil. Crack in the eggs and cook for 3(ish) minutes until the egg whites are cooked but yolks are still runny – it helps to steam the eggs by covering the pan with a lid.

6. Whilst the eggs are cooking, drain the noodles and add these to the wok. Stir to combine and dish up.

7. Place the egg on top. Sprinkle over some sesame seeds, the toasted cashews, and a drizzle of chili oil
