Rajasthani Gatta Pulao Recip
Detailed recipe-
For making Gatta:
100g Besan/Gram Flour
Spices-
1 tsp red chilli powder
1 tsp coriander powder
1/2 tsp turmeric
Salt to taste
1 tsp cumin seeds/ Jeera
1 tsp carom seeds/ Ajwain
1 tsp fennel seeds/ Sauf
1/2 tsp Asafoetida/ Hing
1 tsp dried fenugreek leaves/ kasuri methi
1/2 tsp whole coriander seeds/ khada dhaniya
1/4th tsp Soda
1 tsp Oil
Now mix everything well and gradually add Curd/ Dahi and knead a dough.
(Don’t add too much curd at once)

Now make thin cylindrical shapes from the dough and boil them for 8-10 mins.
Cut them into small pieces and the Gattas are ready.
For making Gatta Pulao:
Heat some Ghee and add some Black pepper, 1 cinnamon, 1tsp Mustard seeds, Cumin seeds, Kadhi Patta. Let them splutter and add some Cashews if you want to, now add Gatta and sauté for 2-3 mins.
Then add chopped Garlic(6-7 cloves), Green chilli (1), Onion (2). Cook them well and then add our regular spices ( salt, coriander powder, turmeric, red chilli) cook everything nice and add cooked Rice (I took about 100-120 grams of Rice and also added some salt while cooking them)

Finally mix everything well, garnish some fresh coriander and Enjoy!
This quantity easily serves 3 people.
