Veal Tenderloin With Grilled Summer Vegetables. by: kwungwong

I like grilling on a lazy summer evening because it's a fairly easy way to prepare a meal. After all, summer is a time for a more relaxed approach to cooking, so why don't we enjoy the cooking time while having a glass or two?

Ingredients:
  • Veal tenderloin
  • Cherry tomatoes
  • Carrots
  • Aubergine
  • Zucchini
  • Parsnip
  • Balsamic vinegar
  • Lemon juice
  • EVOO
  • Salt and pepper
Procedure:
  1. Cut or slice the vegetables to your liking.
  2. Put the vegetables on a grill or a very hot griddle pan. Cook each side of the vegetables for a few minutes or until they are nicely charred, then put them in the oven to keep them warm.
  3. Pat dry the veal and season them with salt and pepper, then brush both sides with olive oil. Again, put the meat on a grill or pan and cook to your liking. I like them medium-rare.
  4. While the veal is resting, take out the vegetables from the oven. Season the vegetables with salt and pepper, some lemon juice, EVOO, and balsamic vinegar.
  5. Serve the veal with the grilled vegetables
