I like grilling on a lazy summer evening because it's a fairly easy way to prepare a meal. After all, summer is a time for a more relaxed approach to cooking, so why don't we enjoy the cooking time while having a glass or two?
Ingredients:
- Veal tenderloin
- Cherry tomatoes
- Carrots
- Aubergine
- Zucchini
- Parsnip
- Balsamic vinegar
- Lemon juice
- EVOO
- Salt and pepper
Procedure:
- Cut or slice the vegetables to your liking.
- Put the vegetables on a grill or a very hot griddle pan. Cook each side of the vegetables for a few minutes or until they are nicely charred, then put them in the oven to keep them warm.
- Pat dry the veal and season them with salt and pepper, then brush both sides with olive oil. Again, put the meat on a grill or pan and cook to your liking. I like them medium-rare.
- While the veal is resting, take out the vegetables from the oven. Season the vegetables with salt and pepper, some lemon juice, EVOO, and balsamic vinegar.
- Serve the veal with the grilled vegetables
