CANNELLONI Recipe
CANNELLONI - looks hard but this is LAZY BITCH FRIENDLY and it will feed your ENTIRE goblin family OR it will feed your whole dam self for the week.
Here’s the idea of what I did (sorry I don’t have any specifics recorded)
-in a big bowl grab 1/2 can of chickpeas and mash them. Add in crumbled tofu and mash that too.
-in a food chopper add as many greens/veg as you can (kale, broccoli, Brussel sprouts, capsicum, etc) as well as garlic. Chop up as fine as you can get.
-chop an onion and fry it in a large skillet. Add pine nuts and veg mix and fry for another 5 minutes
-transfer to tofu/chickpea bowl. Add nutritional yeast, a dash (heaped teaspoon) of coconut cream, salt, pepper, garlic powder, onion powder, mustard, and lemon juice. Stir well
-pour a bottle of red pasta sauce into the bottom of your baking dish.
-fill cannelloni tubes with tofu veg mix. Place sauce on the dish.
-spread a Lil sauce on top and add cheese. Cook for around 45 minutes
Now you’re done and you’ve got a meal with more fiber, veg and goodness than what most people get in 3 days xx
