MISO COD WITH SESAME FRIED GREENS
Hat’s off to Han because this was really really good
I’ve never really cooked with Miso before but turns out it’s a hit with a some chunky white fish !
Ingredients (serves 2)
2 cod fillets
A few handfuls of:
Mangetout
Green beans
Samphire
Spinach
1tbsp sesame oil
2tsp sesame seeds
1 spring onion
1tsp chilli flakes
For the miso marinade:
1 sachet of white miso paste (about 1tbsp)
2tsp soy sauce
1tbsp water
1/4tsp grated fresh ginger
1/2tsp maple syrup
I used my air fryer to cook the cod but the oven will work just as well.
Method
1.Preheat the oven or air fryer to 180C.
2.Add all the marinade ingredients to a mixing bowl and stir to combine. Place the fish fillets into the marinade and toss generously to coat. Ideally, allow to marinade in the fridge for a few hours before cooking.
3.Once ready to cook, place the fish into a baking dish and bake for approximately 10 minutes or until the fish is fully heated through.
4.Meanwhile, heat the sesame oil in a wok or frying pan over a medium-high heat. Add the green veggies, sesame seeds + chilli flakes and a splash of soy sauce and stir fry for a couple of minutes so they still have some crunch.
5.Remove the cod from the oven. Plate up the greens and place the cod on top.
