Tomato & chili Portuguese style sardines on toast. By: hans.hungry

Toasted sourdough, tangy sardines, rich tomato & chili sauce - yum

Ingredients
Tinned sardines in olive oil (& tomato sauce if you can get it)
1 small garlic clove, finely sliced
10(ish) cherry tomatoes
1/2 tsp smoked paprika
1/2 lemon, juice & zest
Fresh parsley, chopped
Spinach (optional)
Chilli flakes or ground chili
Olive oil
Bread of choice (I went for sourdough)

Method
1. Heat olive oil in a small pan on medium-low heat. Add the finely sliced garlic and cook for 2 minutes until starting to soften.

2. Add the whole cherry tomatoes with the paprika and a pinch of salt and let them simmer gently for 10-15 minutes until they start to break down and release their juices.

3. Add the sardines to the tomatoes and allow them to fall apart in the sauce. Gently warm for a few minutes
Add a squeeze of 1/2 lemon juice
Stir through some spinach and allow to wilt - if using.

4. Toast your bread & spoon over the tomatoey sardines.
Sprinkle with a load of fresh parsley, some grated lemon zest & a drizzle of EVOO
