Beans + cheese on toast recipe
But we’re making it FANCY
White beans + greens on toast cooked with dill, mint + lemon, topped with grilled ricotta and drizzled with olive oil
Ingredients (1 serving)
Bread of choice
2-3 spoonfuls of organic white beans (or any bean of choice)
A few handfuls of kale / or any other greens you have to hand
A spoonful of cooked peas, crushed (optional but works well)
A small bunch of fresh dill, finely chopped
A small bunch of fresh mint, finely chopped
½ lemon: juice + zest
A few dollops of ricotta cheese
Black pepper
Olive oil
Method
1. Add your greens + herbs to a saucepan over medium heat with a dash of olive oil. Gently cook until the kale has wilted, then throw in the white beans with their juices. Grate in the lemon zest + a squeeze of the juice and season to taste.
2. Bring the grill to medium-high heat.
3. Toast your bread.
4. Plate up the toast and spoon over the herby beans. Dollop the ricotta cheese on top of the beans and place it under the grill for a few minutes, just into the cheese turns golden.
Finish with a drizzle of olive oil, more lemon zest + cracked black pepper.
